This week we are going to try something a bit more oriental, due to the quickly approaching lunar New Year. While not completely traditional, the following recipe is a simple, inexpensive, and tasty stir-fry. Stir-fry recipes translate to tasty one-dish meals that are long on flavor, but short on prep time, cost, and cleanup. This light, colorful favorite takes only five ingredients-yes only 5! And all of which you’re likely to have on hand…well the ramen noodles at the very least! I suggest serving with a dash of soy sauce and a side of pineapple slices. Or if you don’t like beef you can try ground turkey instead.

Asian Beef with Noodles

Yield: 4 servings
Prep Time: 5 minutes
Cook Time: 15 minutes
Total: 20 minutes

Ingredients:

  • 1 pound ground beef
  • 2 packages (3 ounces each)
  • Oriental ramen noodles, crumbled
  • 2-1/2 cups water
  • 2 cups frozen broccoli
  • stir-fry vegetable blend
  • 1/4 teaspoon ground ginger
  • 2 tablespoons thinly
  • sliced green onion

Directions:

In a large skillet, cook beef over medium heat for 4-5 minutes or until no longer pink; drain. Add the contents of one ramen noodle flavoring packet; stir until dissolved.

Remove beef and keep warm.

In the same skillet, combine the water, vegetables, ginger, noodles, and contents of the remaining flavoring packet. Bring to a boil. Reduce heat; cover and simmer for 3-4 minutes or until noodles are tender, stirring occasionally. Return beef to the pan; cook for 2-3 minutes or until heated through. Stir in onion.
